Four flights of a narrow Jordaan stairwell are part of the working week for her, and she would sooner know in advance than find out with an armful of towels. Twenty-four, blonde, French and English, she is quick with the practical questions and slow once the hour has begun. A small room is no obstacle and she says so before a guest can apologise for one; a bed against two walls just means the plan changes shape. She will tell you what the floor needs under it and how warm the air should be. What happens inside the hour she decides as it goes.
